Regular sowings, made every three weeks, will ensure a continuous supply of young roots. Keep well watered during dry spells as this will help prevent the roots from splitting. Root vegetables boast a host of colours and flavours and include carrots, radish, horseradish, sweet potato, turnip and beetroot. Their low rate of metabolism allows for a relatively long postharvest life. Thanks to their high water content, they are key ingredients for a low fat diet.
