Jameson Irish Whiskey John Jameson, the founder, moved to Ireland from Scotland, and in 1780 started producing whiskey in Dublin, Ireland in 1780. Produced ever since, it is now produced at the New Midleton Distillery in County Cork, Ireland. A blended whiskey, its produced by taking selecte pot still and fine grain whiskies. These are then triple distilled. This gives Jameson it's signature smoothness. Once this process is completed, the whiskey is aged for a minimum of four years in oak casks.  The result of this is the world's best selling Irish Whiskey. On the nose it has a light floral fragrance, which has spicy wood and sweet notes. On the palate there is a perfect balance of the spicy, nutty and vanilla notes. There are hints of a sweet sherry as well, which enhances the smoothness of this whiskey. It finishes with a mellow smoothness, lingering pleasantly on the palate. Independence Blended Irish Whiskey (Previously known as Proclamation Blended Irish Whiskey) With their Blended Irish Whiskey, the distillery aims to honour both the history and the people behind the birth of the Proclamation (the document which proclaimed the establishment of the Irish Republic in 1916). As a triple distilled whiskey, it pays tribute to the three printers of the Proclamation, William O’Brien, Michael Molloy and Christopher Joseph Brady. After this process it is aged in new American Oak - which ensures a singularly smooth whiskey with a clean taste. Once sufficiently aged, the whisky is then matured in bourbon casks & blended with a touch of sherry-finished malt which gives a rounded, toasted finish. Teeling Whiskey Stout Cask With a family history in distilling which dates back to Walter Teeling in 1782, it was no surprise when Jack and Stephen Teeling opened a distillery in Dublin in 2015. In fact, the Teeling Distillery is now the first new distillery in Dublin for over 125 years. They wanted to create a contemporary brand, which, whilst looking to the future they ensure to keep an eye on the past. In this way, they can appeal to the modern whiskey drinker, whilst ensuring traditions are honoured. For their Stout Cask whiskey (one of their limited edition releases), their unconventional approach has created a whiskey which comes full circle. For many years they have been collaborating with Galway Bay Brewery (a celebrated craft brewey). They send them their used barrels, which had held Teeling's Small Batch Whiskey, and the brewery use them to create stout. That used be where the story finished. However, now they return the barrels (which has been further seasoned with the Imperial Stout), and Teeling finish a whiskey in them. These barrels impart a rich, dark and malty influence to the whiskey. This influence, Teeling believe, is a "true celebration of flavour-focused innovation". On the nose this is a whiskey with notes of dark chocolate and truffles. Hints of sour apples and ocean spray enliven the aroma. On the palate there is sweet malt, roasted barley, sour fruits and interestingly, black cherries. The finish develops into a sweetness of honeycomb, oranges and cream. Produced ever since, it is now produced at the New Midleton Distillery in County Cork, Ireland. A member of their Caskmates series, their IPA (Irish Pale Ale) edition is perfect for those whiskey drinkers who also enjoy craft beer. Jameson sent a number of their used whiskey casks to the Franciscan Well brewery. Here they were used to age the brewery's craft beer. After this, they were sent back to Jameson were they were used to finish some of their Irish whiskey. The result is a perfect marriage between crisp hoppy notes from the IPA with smooth Irish whiskey. On the nose the hops from the ageing come through, floral, and grapefruit citrus notes. These join with wood, and a touch of nuttiness. The flavour also brings the hops and a refreshing citrus note. Sweet herbs and a touch of spice round out the flavours. The hops, as well as fresh fruit remain through the finish, as wel as barley. As with all Jameson, it retains its signature smoothness. Take a tall glass filled with ice and add 50ml of the Jameson IPA edition. Gently pour over 100ml of your chosen tonic (we liked Franklin & Sons Natural Tonic). Stir gently and garnish with a wedge of lemon.

They wanted to create a contemporary brand, which, whilst looking to the future they ensure to keep an eye on the past. In this way, they can appeal to the modern whiskey drinker, whilst ensuring traditions are honoured. For their small batch whiskey, their unconventional approach ensures a whiskey which is full of natural character. Whilst this is undoubtedly an Irish whiskey, they have challenged what this means. It has distinct layers of flavour which are a result of their unconventional cask maturation process. Using ex-bourbon barrels, they age grain and malt whiskies. This process imparts delicious vanilla and oak notes to the whiskey. Once completed, they blend these (3:1 grain to malt) and age further, this time in Central American Rum casks. . This process lasts for up to 12 months, giving the whiskey a distinct, and unique, dried fruit profile. The result of this process is something quite different. The nose is inviting, with vanilla and spice merging perfectly with bright sweet notes of Rum. On the palate there is a solid influence from the resting in rum barrels. This creates a smooth, sweet and slightly woody flavour. Further influence from the rum shows with fruit notes coming through, with a sweet spicy finish which is complimented by a lingering woody undertone. We love this in an Apple of my Eye cocktail, which works particularly well in the autumn / winter. Add 35ml of the whiskey, 25ml of apple juice, 5ml of honey and 5ml mixed spice (apple pie spices!) to a cocktail shaker filled with ice, and shake until chilled. Two Stacks The Blender's Cut Irish Whiskey In creating Two Stacks, there was a desire to blend not just whiskey, but also the very best of contemporary Irish flavour and the real heritage of distilling. Historically in Ireland, merchants and grocers would blend and age their own whiskey blends. They would select from distilleries and then chose their own casks in which to age. Over the last 150 years this heritage has slowly been on the decline. Two Stacks wanted to change this. Relying on traditional techniques, they chose whiskies, blend and cask. Then through taste and nose they decide when the Whiskey has reached its maturity and then empty and hand label each bottle. Their Blender's Cut uses the same recipe as their First Cut Irish Whiskey, however they bottle this one at cask strength – a weighty 65% ABV! The recipe itself is a blend of grain whiskey's aged in virgin oak and bourbon oak casks. A Pot still whiskey which has been aged in Oloroso Sherry Casks. And finishes with a bourbon cask matured double-distilled malt, and a peated malt aged in bourbon casks. This results in a full-bodied Irish whiskey, which is packed full of flavour. On the nose there is a rich sweetness from molasses, which is cinnamon enhanced nectarine and a little oak. The palate opens with dried fruits and notes of raisins and sultanas. Ginger and almonds also come through and are joined by caramel sweetness and a touch of black pepper. It finishes with a honey note, balanced with pepper and nutmeg spice. Two Stacks Irish Whiskey - Dram in a Can In creating Two Stacks, there was a desire to blend not just whiskey, but also the very best of contemporary Irish flavour and the real heritage of distilling. Historically in Ireland, merchants and grocers would blend and age their own whiskey blends. They would select from distilleries and then chose their own casks in which to age. Over the last 150 years this heritage has slowly been on the decline. Two Stacks wanted to change this. Relying on traditional techniques, they chose whiskies, blend and cask. Then through taste and nose they decide when the Whiskey has reached its maturity and then empty and hand label each bottle. For their Dram in a Can Two Stacks wanted to create a truly distinctive Irish Whiskey, but one for the contemporary palate. To do this they created a blend of grain whiskey's aged in virgin oak and bourbon oak casks. A Pot still whiskey which has been aged in Oloroso Sherry Casks. And finishes with a bourbon cask matured double-distilled malt, and a peated malt aged in bourbon casks. On the nose there is a sweetness, joined by warm butter and a hint of peach tea. It is delicately sweet and spicy whiskey on the palate, with blackberry notes, butterscotch and toasted oak. The finish is long, with a playful warm honey note. This cross-over also allow them to age their beers in spirit barrels, and vice versa - adding additional depths of flavour to their drinks. Blacks' whiskies are distilled in two copper stills, Morrigan and Bonny. They then mature the whiskies in a variety of different cask types depending on the finished whisky. They do all their own milling, mashing, fermenting and distilling themselves - which ensures the quality they expect from the final products. With their Black Smoke edition, Blacks have created a powerful Irish Whiskey which is bursting with rich peaty smoke and sweet oak. With a long and lingering finish, this is definitely for those that enjoy a lingering finish! On the nose the smokey peatiness almost jumps out at you, before being joined with floral heather and hints of honey and oak. On the palate there is a silky smoothness, and a toffee like sweetness. These are followed with complex malt flavours, stoned fruits before developing into intense full-bodied peat. On the nose there is a sweet introduction, as warm sugar notes come through. These are then joined by a hint of smoke, vanilla, maple and even baked prunes! The palate is smooth and oily, which coats the mouth well. Maple coated nutes, cinnamon pancakes and warm spice develop. This leads to a medium finish, not overwhelming the palate. Located in Country Kerry in the South-West of Ireland, the Dingle Distillery produces whiskey's that they believe to be a product of their environment. They use local well water, manually mash their barley, use wooden fermentation vessels and copper pot stills. The environment they are located in also ensures the maturation process creates a whiskey unlike any other. For their Pot Still whiskey's they use a mix of malted and unmalted barley. Fun Fact: Bealtaine is a special day in the Irish calendar. It marks the end of spring and the beginning of summer.
