Belsazar Dry Vermouth With a desire to bring a contemporary twist to Vermouth, Belsazar have taken the creativity and vitality of Berlin and merged it with the tastes, and know-how from the Black Forest area of Germany. They use Grapes and wines from carefully selected wineries to build the base of their Vermouth. To this they add wormwood (and essential component of vermouth), but also other native herbs to ensure a natural character. Finally, their finishing touch is the addition of a 'dash' of fruit brandy from the Schladerer distillery (which has been producing fruit brandies since 1844). After combining the various components, the resulting vermouth is aged for up to three months in neutral stone casks. This allows the development of its complex flavours and aromas (the stone casks ensure no additional flavours, which would occur if aged in wood). Whilst there are a lot of Dry Vermouth's available, Belsazar make theirs that little bit different. Their base wine is a Gutedel Cuvee.  It has a delicious aroma of summer fruits which is joined by chamomile, overall floral and really fruity. On the palate there is a blend of the fruit (apricot and plums), a hint of mild spice and the bitterness note too along with a refreshing and intense mint aroma. (The 'secret' in their dry vermouth is a dash of plum brandy from Schladerer!). More from Belsazar Perfect Serve Delicious when served with Tonic Water, and we recommend Franklin & Sons Tonic (it lets the flavours in the vermouth come through). Take a glass filled with ice and add 50ml of the vermouth and pour over 100ml of the tonic. Lillet Rouge Apéritif For the creation of the original Kina Lillet, Paul and Raymond Lillet took inspiration from Father Kermann, a travelling monk after his return from South America. Upon his return he produced medicinal using herbs and spices. It originally included quinine, and was the French equivalent of a Gin & Tonic to ward off malaria.  Of the three remaining Lillet's available today (Rouge, Rosé and Blanc) their Rouge is the oldest, originally coming to market in 1962. It was created by Pierre Lillet (Raymond's grandson) to capitalise on the growing taste for red wines in America. For their Rouge, Merlot wine (85%) is mixed with macerated sweet Spanish and Moroccan liqueurs (15%) and green orange peels from Haïti. They stir the ingredients in oak vats, and then treat it like a Bordeaux wine during the ageing process On the nose Lillet Rouge has a rich smell of ripe dark fruits. The flavour is full of fresh orange flavours, joined with berries, vanilla and a delicate spice backdrop. At the end typical soft tannins from the ripe fruits linger in the mouth. Moët & Chandon Imperial Brut Champagne With a history which dates back to 1743 (when it was known as Moët et Cie), Moët & Chandon (officially Moët et Chandon) are known as one of the great champagne houses, and are also one of the largest producers of champagne in the world. Fun fact: The T at the end of Moët is pronounced (Mo-et), as the founder was French-born but had a surname of Dutch origin! They own 1,190 hectares (or 2,900 acres) of vineyards, from which they produce approximately 28 Million bottles of champagne annually. This, their Imperial Brut was first introduced in 1869, and is their best-selling brand. It is made from a blend of over 100 different wines - of these, 20 - 30% are reserve wines which are specially selected to enhance the maturity, complexity and constancy of the finished champagne. Between 30 and 40% are Pinot Noir, giving body. 30 - 40% are Pinot Meunier which adds suppleness, and 20 - 30% if chardonnay - giving finesse. The resulting champagne is an elegant golden straw colour, with almost green highlights. The aroma is vibrant, and full of both green apple and citrus fruits. A touch of white flowers leads into an enticing brioche, cereal and fresh nuts bouquet. The palate brings sumptuous notes of pears, apples and peaches. The bubbles almost caress the tastebuds, and open up lively citrus fuits and hints of gooseberry. Lillet Blanc Apéritif For it's initial creation, Paul and Raymond Lillet took inspiration from Father Kermann, a travelling monk after his return from South America. Upon his return he produced medicinal using herbs and spices. It originally included quinine, and was the French equivalent of a Gin & Tonic to ward off malaria.  When the brand was sold to Bruno Borie in 1985, there was a slight reformulation of the drink, and the quinine was removed - which also took away the slight bitterness which quinine imparts. For its creation, semillion wine is mixed with macerated sweet Spanish and Moroccan liqueurs and green orange peels from Haïti. They steep the ingredients in oak vats, and then treat it like a Bordeaux wine during the ageing process On the nose, Lillet Blanc gives off syrupy sweet aromas of apricots, peaches and a floral note. The flavour is sweet, and has a rich oily feeling - which allows it to coat the mouth, imparting its flavours. It has a mild lime zest note to start, joined by sweet peaches. This develops into a sweet, honey flavour. The finish is short, and imparts a slightly sour note of orange and grapefruit. However, the overal flavour remains sweet.  Perfect Serve Typically enjoyed as an apéritif, it can be enjoyed neat or with a wedge of citrus in the glass. It's also found in a number of cocktails, such at the Vesper Cocktail (created for James Bond). For a simple, slightly longer drink, try a Lillet Bive, a popular germanic cocktail. Take 50ml of the Lillet Blanc, and add 100ml of Fentimans Tonic Water. Stir well, and swerve with a sliced strawberry, a few mint leaves and a slice of cucumber.
