Copperhead The Gibson Edition Gin Whilst Copperhead was earning it's name in the world of Gin, so too were bartenders coming back into fashion as more people enjoy cocktails, and the theatre that comes with their creation in bars. It should therefore come as no surprise that a bartender is behind The Gibson Edition from Copperhead. In 2018, Marian Beke (owner of the Gibson bar in London) created this gin. As the name of the bar, and gin would suggest, it was inspired by the classic Gibson Martini cocktail (a mix of gin, dry vermouth and a garnish of a pickled onion!).  The result is a gin with a definite savoury flavour profile. Along with the original 5 Copperhead botanicals, there are thirteen carefully selected additional spices, commonly used for pickling. These, which include mace, pepper, cassia, bay leaf, ginger, allspice, fennel and dill seed are also joined by a 'dash' of eight-year-old Genever (which adds a delicate touch of sweetness). When combined, these ensure a smooth yet deliciously complex taste. On the nose this gives a plethora of warming spice aromas, and a hint of pepper. Through these subtle hints of orange blossom, and hop also come through. With the flavours, the juniper is deep and earthy, with bitter herbal notes. The same flavours come through in the flavour as they did in the aroma, melting perfectly together delivering a unique herbal and savoury profile. A hint of sweetness keeps this fresh on the palate. The finish is long and keeps the tast-buds tingling! Rich, fragrant and spicy through to the end. A totally enthralling experience in the mouth. Read more about Copperhead Perfect Serve Whilst this works well mixed with a neutral tonic (try with Fentimans Connoiseurs Tonic), we recommend trying as a Gibson Martini Cocktail (from which its inspiration came).  Take a mixing glass (or cocktail shaker) and fill with ice. Add 60cl of the gin, and 10cl of a dry vermouth. Stir well to chill, and strain into a Martini glass. Garnish with a pickled onion.

Citadelle No Mistake Old Tom Gin 50cl

Citadelle No Mistake Old Tom Gin Since 1996, Château de Bonbonnet in the southwest of France has been the home of Citadelle Gin. Citadelle is proud of its geographic location, and from this they take inspiration. In 1836, in one of the many bars he frquented, Charles Dickens marveled at "the ingenuity employed to give sobriquets to gin, with one term more seductive than the next, to describe it in multiple ways." One of these nicknames was "No Mistake" and Citadelle felt it appropriate for their Old Tom gin. Old Tom gin's were popular in England during the 19th century, and Citadelle wanted to keep this in mind. These were sweetened gins, and during travels in the Carribean, a brown sugar (similar to Demerera) was discovered. Moist and heavy, it was the missing ingredient Citadelle had been searching for.  The Old Tom gin consists of blending Citadelle Réserve (used due to its floral notes), with aged sugar. This is then placed back in casks and rested (again) for several months.  The result is a gin with a beautiful gold colour. The aroma is fresh, and powerful - juniper, the zest of orange and cardamom come forward early, before herbal and floral aromas come through (jasmine & honeysuckle), and a sweet coffee like fragrance. In the mouth this is deliciously full, and elegant. It has a sweet profile as can be expected with the added sugar, but this blends with other flavours and is perfectly balanced. Lemon zest, anise and almond join with warm spice notes of nutmeg, cinnamon and cubeb pepper.  The finish is long. Floral, with more woody spiced notes, and hints of licorice. Read more about Citadelle Perfect Serve Whilst this works in a number of cocktails calling for Old Tom Gins (such as the Tom Collins or the Martinez), we like this best sipped. The sweet notes almost remind of a rich rum - and we find is delicious enjoyed simply and on its own (maybe with a single large ice cube).
